Resident Chef At DOMVS, The Italian Restaurant
Carmine Esposito has just joined DOMVS, the Italian Restaurant at Sheraton Towers Singapore Hotel as the Italian Chef. Carmine has over 20 years of culinary experience working in various Italian restaurants in Italy (Trieste and Monfalcone) and in China (Beijing and Shanghai), specializing in authentic Italian cuisine and the art of making traditional-styled pizzas. In 2008, wanting to explore working in a hotel environment, he ventured to Singapore and started his working experience here as the Italian Chef for a restaurant at an International-chain hotel.
At DOMVS, Chef Carmine will be showcasing the traditional Italian cuisine with a definite flavour of the home-cooked fare, just like how his Mama cooks for the family. With his in-depth knowledge of the Italian cuisine, Carmine wants to share the story and history of the wonderful cuisine of his home with the world. Some of his noted signature dishes are Tuna Tartar (from South Italy), Seafood Guazzetto, Homemade Square Spaghetti with Seafood and Cherry Tomato (from South Italy), Roasted Rack of Lamb with Sweet & Sour Onion, Baby Potato served with Red Wine Sauce (from North Italy) and Baked Seabass with Tagiasche Olive and Fennel (from South Italy). As for the monthly promotions at DOMVS, Chef Carmine will be introducing authentic Italian specialties from various regions in Italy e.g. from Lombardia in the North, to Sardegna in the Central, and to Sicilia in the South.
Born in Trieste, Italy in 1974, Carmine grew up in a family of chefs and was taught how to make pizzas when he was only 8 years old. While working in his family restaurant, Posillipo in Trieste, Carmine learnt the fine art of making Napoli traditional-styled pizzas and the skill of creating authentic Italian fare. His career took an International turn when he was invited to work in an Italian Restaurant, Adria Restaurant in Beijing at the age of 22. While in Beijing, he fell in love with martial arts and stayed in China for 10 years to study gongfu in Beijing Sport University and Shaolin Temple.
Carmine met his Columbian wife, Paula in Italy and today, they have a one-year old daughter, Isabella.
