The first restaurant in Singapore to introduce diners to a bona fide Sicilian culinary experience - DOMVS, the Italian Restaurant continues its heritage of serving first-rate Italian cuisine, since it opened its doors in 1985 - the same year that Sheraton Towers Singapore was inaugurated.
DOMVS, which means 'home' in Latin (the classical tongue of Italy), has built up a reputation of being a grande dame of Italian dining in Singapore over two decades. The restaurant was totally revamped in 2007 and now continues to wow diners with its Sicilian-inspired gastronomical offerings, in a space that is contemporary yet classic.
The interiors are tastefully designed by Hirsch Bedner Associates, with a neutral palette and black accents, giving the restaurant a classic yet modern feel. Banquette seating provides a private dining experience, perfect for any size group from two to twelve. Diners can occasion a peek into the kitchens, through the bottles of the ceiling-height wine racks that separate dining from kitchen area.
Adjacent to the main dining area is the Celebrity Room, available for those who prefer a bit more privacy, and it seats up to 12 persons comfortably. The showpiece here is the 4.2m long table top hewn from 2 pieces of Neronovalato granite flown in from the US, complimented nicely by a pair of black crystal chandeliers suspended elegantly from the ceiling. A second wine rack, at one end of the room facing the reception area, allows diners entering the restaurant a discreet partial view into the Celebrity Room.
Chef Lino Sauro oversees the kitchen and dishes out authentic, Sicilian culinary treats. His treatment of the food is light-handed, showcasing the freshness of the produce and with an emphasis on original flavours - this can be seen in his seasonal Chef Specials.
There is a choice of 2 Business Set Lunches each day, which diners can customize by choosing from a menu offering varied dishes. The set menu is changed seasonally. For the more gastronomically adventurous, they can try the 7-course Gourmet menu, with or without wine pairing. Each month there will be Chef Specials created around seasonally available produce from Sicily.
